Why Your Coffee Doesn't Taste Good (And How to Easily Fix It)

You have good beans.
A decent machine.
And yet, something is missing in your cup.

The taste is flat, too sour or too bitter.
Many people then look to their machine or their own technique.
In reality, the problem often lies earlier, in the basics.


The mistake almost everyone makes

Coffee is usually chosen by feel.
A name that appeals.
Packaging that looks good.
Or simply what's available at the supermarket.

What is almost always overlooked is the roast.

And that precisely determines how coffee behaves in your cup.


Why the roast is so important

Not every coffee is suitable for every brewing method.

If you use an espresso machine or automatic coffee maker with a light roast, you often get:

  • a sour, thin cup
  • little body
  • little balance

If you use a dark roast for filter coffee, it will be:

  • heavy and bitter
  • less refined
  • lacking depth

That has nothing to do with your skills.
It's simply a mismatch between bean and brewing method.


The solution is simpler than you think

Good coffee starts with the right combination.

If you brew espresso or use an automatic machine, choose a roast that is intended for it.
A slightly darker roast gives more body and balance.

If you use filter methods like V60 or Chemex, a lighter roast will be better.
There you'll taste the nuances and origin.

With that one adjustment, your cup of coffee will change immediately.


Freshness makes all the difference

Besides roast, freshness plays a big role.

Supermarket coffee is often roasted a long time ago.
As a result, it loses its aroma and character.

Freshly roasted coffee, however, retains:

  • aroma
  • complexity
  • balance

You'll taste it immediately, without having to change anything about your technique.

If you want to brew better coffee, these are the most important points:

  • choose a roast that matches your brewing method
  • pay attention to the roast date
  • choose coffee with a clear origin and flavor profile

They are small choices, but they make a big difference in the cup.


How I prefer my coffee

I personally prefer an americano.
Just a good espresso, diluted with hot water.

This gives you a longer cup of coffee, but with the body and taste of espresso.
For me, that's the perfect balance between drinkable and full of flavor.

Currently, the Leidsche Blend is my favorite.
It works very well for this. Nicely rounded, not too bitter and consistently delicious.

If I have more time, I sometimes grab a single origin.
Then I brew it as a filter, purely to discover more different flavors.


Finally

Many coffee flavors are disappointing because the basics are not right.
Not because it's complicated, but because the wrong choice is made.

Those who start with the right roast and fresh beans will immediately notice the difference.

That's where good coffee begins.
