_________________________________________________
This Costa Rican coffee offers a beautiful balance between the classic flavors (chocolate, caramel, nuts, etc.) of Italian coffee and the "funky" flavors of more modern specialty coffees (fruitiness, floral notes). This bean makes for a sweet, complex, and surprisingly bright cup.
ABOUT don alexis coffee
TRADITION MEETS INNOVATION
The company is owned by the Ramirez-Navarro family. The founder and patriarch of the family, Mr. Alexis Ramirez, was a farmer who dedicated his entire life to agriculture.
In 2015, they took the big step of building their own micro-mill, "Los Campos," with the idea of processing the coffee themselves to focus on the quality and traceability of their micro-lots and to no longer be dependent on the cooperative system. Working through direct trade has always been a dream for the family, which is why the partnership with Grounds was such a milestone.
The main varieties they grow are Caturra and Catuai, although they are taking new steps in planting F-1 hybrid varieties like Esperanza and Milenio with the aim of diversifying and becoming more sustainable. Gesha is planted at the farm's highest altitude, at 2,000 meters.
Many of their batches are processed using fermentation techniques (aerobic and anaerobic), making their coffees complex, sweet and fruity.
the farm
The 'Los Campos' farm is located in the 'Los Santos' region, specifically Tablón del Guarco, Cartago. This region is known for its high altitudes and high-quality coffee.
